A special holiday twist on my classic fudge brownie recipe!

Ingredients

8oz semi sweet baking chocolate (or 1 cup of chocolate chips)

1/2 cup butter

1 cup sugar

1/2 cup brown sugar, packed

3 eggs

1/4 tsp. salt
-
1 tsp. vanilla
-
1/4 cup cocoa powder
-
1/2 cup flour
-
1 cup semi sweet chocolate chips
-
1 package of cream cheese, softened (250 grams)

1/3 cup icing sugar, sifted

1/2 tsp. vanilla
-
1/2 cup crushed candy came pieces

Yields: 12 brownies
Instructions

Preheat oven to 350°F.

Place a sauce pot on low heat and add chopped baking chocolate and butter. Mix until completely melted. Remove from heat and let sit for 10 minutes to cool.

In a bowl mix together sugars, and eggs.

Once cooled, combine the chocolate mixture in with the sugar and egg mixture.

Add salt and vanilla.

Combine cocoa powder and flour, and fold in the chocolate chips.

Grease a pan with cooking spray and add two alternating layers of parchment paper. Pour batter evenly into the pan.

Bake for 35 to 45 minutes, or until a toothpick inserted into the middle of the brownies comes out virtually clean.

Let cool for 15 minutes and then place in the fridge for 1 hour to completely cool.

While the brownies are cooling, cream together the cream cheese, icing sugar, and vanilla until completely combined.

Spread the cheesecake mixture evenly over the brownies and sprinkle with crushed candy cane pieces.
Note: The smaller the pan, the thicker the squares will be, and the more time they will need to fully bake. The squares pictured were baked for 45 minutes in a 8" x 8" pan.
