These brookie bars are 50% chocolate chip cookie and 50% brownie, yet 100% delicious! These fudgy and chewy bars are the perfect alternative to traditional brownies or cookies.

Ingredients
Cookie Layer

1/2 cup butter, softened

3/4 cup light brown sugar, packed

1 tsp. vanilla

1 egg
-
1/2 tsp. baking soda
-
1 cup flour, spooned and leveled

1 cup semi sweet chocolate chips
Brownie Layer
-
4 oz. semi sweet chocolate, chopped

1/4 cup butter
-
3/4 cup white sugar
-
1 egg
-
1 tbsp. canola oil
-
pinch of salt
-
1/3 cup flour, spooned and leveled
Instructions

Starting with the cookie layer, cream together butter and sugar until smooth.

Add the vanilla and egg, and mix.

Fold in the flour until fully incorporated, followed by the chocolate chips.

Keeping the cookie dough in the bowl, refrigerate while completing the brownie layer.

Melt the 4 oz. of semi sweet chocolate and butter over low heat, stirring constantly until fully melted. Remove from heat and let cool for a few minutes.

Cream together the egg, oil, and sugar.

Once cooled, add the melted chocolate and butter mixture in with the egg and sugar mixture.

Add the salt and flour and combine until fully incorporated.

Preheat oven to 350°F.

Using an 8x8 or 9x9 pan, spray with cooking spray and add two pieces of parchment paper in alternating directions.

Pour brownie batter into the pan and spread to the edges.

Remove the cookie dough from the fridge and layer on top of the brownie batter.

Bake for 30 to 35 minutes, or until golden brown, and the center no longer jiggles when shaking the pan.

Remove from oven and let cool for 20 to 30 minutes before serving.
