These muffins are soft and fluffy, and super easy to make! Whenever you have a craving for peanut butter, whip up this batch of delicious muffins for a quick fix!

Yields: 12 muffins
Ingredients

2/3 cup smooth peanut butter

1 egg

1 cup milk
-
1 tsp vanilla

3/4 cup white sugar

1/4 tsp. salt
-
1 & 1/2 tsp. baking powder

1 & 1/2 cup flour

1/2 cup mini semi sweet chocolate chips (optional)
Instructions

Preheat oven to 350°F.

Cream together peanut butter, egg, milk, and vanilla slowly until fully combined.

Mix in sugar and salt.

Add baking powder and flour and mix until fully combined.

Line a 12-count muffin pan with liners or spray with cooking spray. Divide batter evenly among each cup or liner. Add chocolate chips to the top of the muffins before baking if desired. Note: These are large muffins, meaning the batter should fill right to the top of each liner.

Bake muffins for 25-30 minutes, or until the edges of the muffins turn golden brown and the tops are set.

Remove from oven and let muffins cool on cooling rack for 10-15 minutes before serving.
