A holiday classic! Soft butter cookies stuffed with pecan pieces and rolled in icing sugar. Yum!

Ingredients
- 1 cup butter, softened
- 1/2 cup powdered sugar, sifted
- 1 tsp. vanilla
- 2 cups all-purpose flour
- 2/3 cup chopped pecan pieces
- 1 cup powdered sugar (for rolling)
Instructions

Preheat oven to 400°F.

Mix together softened butter, sifted icing sugar, and vanilla thoroughly.

Fold in the flour one cup at a time, followed by the pecan pieces.

Roll dough into small balls, about 1 inch in size, and place on a baking sheet covered in parchment paper.

Bake cookies for 10 minutes or until set but not browned.

Remove the cookies from the oven and let them cool on the baking sheet for 5 to 10 minutes. Once cookies are cooled but still warm, roll the cookies in the additional powdered sugar. When the cookies have completely cooled, roll again in sugar if desired before serving.
