Caramel Brownie Cheesecake

What could be better than mixing brownie, cheesecake, and caramel? Thsi recipe is a must-try!

Ingredients

Brownie Layer

  • 1/2 cup butter, melted
  • 1 cup white sugar
  • 1 cup cocoa powder, sifted
  • 1/2 tsp. vanilla
  • 2 eggs
  • 1/2 cup all-purpose flour

Cheesecake Layer

  • 750 grams full fat cream cheese (3 regular-sized bricks), softened at room temperature
  • 3/4 cup white sugar
  • 3 eggs
  • 2 tsp. vanilla
  • Caramel sauce for topping

Instructions

Making the Brownie Layer

  1. Preheat the oven to 325°F.
  2. Mix together the melted butter, sugar and cocoa powder until fully combined.
  3. Add in the vanilla and eggs and mix.
  4. Fold in the flour until fully incorporated.
  5. Spread the brownie batter into a greased cheesecake dish or springfoam pan, and bake for approximately 18 minutes, or until the top is set but the center is still giggly. 
  6. Remove from oven and let cool while preparing the next layer.

Making the Cheesecake Layer

  1. Combine the softened cream cheese with the sugar and vanilla in a new bowl.

  2. Mix in the eggs, one at a time until fully combined.

  3. Pour the cheesecake  batter overtop of the brownie layer once partially cooled and bake for apporximately another 30 minutes, or until a toothpick inserted into the middle of the cheesecake layer comes out clean.
  4. Remove from oven and let cool for an hour. Place in refrigerator until ready to serve, then add caramel drizzle on top of cut cheesecake pieces.
