m&m Brownie Cookies

Published on 27 August 2024 at 16:29

These cookies are crispy on the outside and fudgy like brownies in the center! These are the perfect alternative to regular brownies!

Ingredients

  • 1 & 1/2 cups chopped chocolate (approximately 250 grams)*

  • 3/4 cup butter

  • 2/3 cup white sugar

  • 1/2 cup light brown sugar, packed

  • 2 eggs

  • 1 tsp. vanilla

  • 2 tbsp. Hershey's Special Dark cocoa powder

  • 1 tsp. baking powder

  • 1/4 tsp. baking soda

  • 1 & 1/2 cups all-purpose flour

  • 1/2 cup m&m's (for topping)

* For this recipe I use a combination of dark chocolate (200 grams) and semi-sweet chocolate (50 grams)

Instructions

  1. Preheat oven to 350°F.

  2. Place a sauce pot on low heat and add chopped baking chocolate and butter. Mix until completely melted. Remove from heat and let sit for 10 minutes to cool.

  3. In a bowl mix together sugars, vanilla, and eggs.

  4. Once cooled, add the melted chocolate mixture and fully combine.

  5. Fold in the cocoa powder, baking soda, baking powder, and flour. The mixture will be quite sticky once fully combined (see picture above).

  6. Spray two baking sheets with cooking spray and cover with parchment paper. Using an ice-cream scoop, scoop cookie dough and roll into a ball. Do not place more than 6 balls on one cookie sheet, as they will spread quite a bit.

  7. Add m&m's to the top of each cookie dough ball.

  8. Bake for approximately 12 to 14 minutes, or until cookies are just beginning to crack in the center.

  9. Remove from oven and cool on rack for 15 minutes.
