These mini Oreo cheesecakes are baked with a chocolate crumb crust, a rich cheesecake center, and topped with an Oreo cookie crumble!


Yields: 12 mini cheesecakes
Ingredients

1 & 1/2 cups chocolate baking crumbs

1/4 cup butter, melted

2 bricks cream cheese (150g each), softened at room temperature

1/2 cup white sugar

1 tsp. vanilla

2 eggs
-
14-16 Oreo cookies, crushed
Instructions

Mix together chocolate baking crumbs and melted butter until combined.

Line a 12-count muffin pan with liners or spray with cooking spray. Divide crumbs evenly between each liner, and press down using the back of a spoon.

Preheat oven to 350°F, and place trays in the oven while preheating. Remove trays from oven once it is preheated, and set aside.

Combine the softened cream cheese with the sugar and vanilla in a separate bowl.

Mix in the eggs, one at a time until fully combined.

Fold in Oreo cookie crumbs.

Separate the batter evenly into each liner. Add extra Oreo cookie crumbs to the tops of the cheesecakes.

Bake for 23 to 26 minutes, then remove from oven and let cool for an hour.

Place in refrigerator until ready to serve.
