Apple Cream Cheese Crumble Bars

These tasty bars are the perfect twist of cheesecake and apple pie! Find the recipe below.

Ingredients

  • 34 cup butter, softened
  • 2/3 cup + 1tbsp. sugar 
  • 2/3 cup dark brown sugar
  • 1 & 1/3 cup quick oats
  • 3/4 cup flour, spooned and leveled
  • 250 grams cream cheese, softened
  • 1 can (300ml) sweetened condensed milk
  • 3-4 apples, skinned and sliced into squares
  • 2 tsp. cinnamon
  • 1 tsp. vanilla
  • 1 egg

Instructions

  1. Preheat oven to 350°F.
  2. Cream together the softened butter and the white and brown sugars. 
  3. Fold in the oats, flour, and 1 tsp. of cinnamon, and mix until fully combined.
  4. Add two-thirds of the mixture to the bottom of an 8 x 8 pan with parchment paper or greased. Set aside the remaining third of the mixture.
  5. Once the oven is pre-heated, bake the crust for 10 minutes, then remove from oven to cool.
  6. While the crust is cooling, mix together the softened cream cheese and sweetened condensed milk using a regular stand mixer in a new bowl.
  7. Add in the vanilla and egg, and mix until fully combined.
  8. Pour the cream cheese mixture over the cooled crust. 
  9. Combine the cut apples, 1 tbsp. white sugar and 1 tsp. cinnamon, until the sugar and cinnamon are fully coating the apple pieces. 
  10. Spread the apple pieces ontop of the cream cheese mixture.
  11. Sprinkle the remaining third of the crumble mixture overtop of the apple pieces.
  12. Bake for approximately 30 minutes, or until the centre no longer jiggles when shaken.
  13. Remove from the oven and cool for 1 hour before slicing and serving.
